What is a Croquembouche?

A croquembouche or croque en bouche is a tower of choux buns filled with patisserie cream and dipped in caramel. Each bun is then built into a tower stuck with a little more caramel. The name croque en bouche translates into ‘crack in the mouth’. The texture of the crisp caramel, followed by the soft cream is what makes this cake so special. The cream can then be flavoured to add a little something extra. Flavours include
